The work week can get hectic, so I always try and plan something special for dinner during the weekend. Tonight that means steak, baked potatoes, and this delicious kale and mango salad. Pulling from the Food Network recipe, this salad is not only quick and easy to make but it tastes amazing. I’ll admit that I was a little hesitant when it came to cutting up the mango, but it literally is one of the easiest things ever. Plus it adds a freshness to the salad (along with the lemon juice) that helps brighten any dish. Note: we did substitute some sunflower seeds we had handy for the pumpkin seeds.
