When it comes to my personal weight loss, I rely a lot on meal prep. Every weekend I’ll figure out what I want to eat during the week for breakfast, lunch, and dinner. I’ll figure out the calories involved and put it all into my counting app. The only thing is, and I fully admit this, I’m lazy and I don’t really like to cook. So I try to look for recipes that are super easy and take the least amount of time possible. Enter this amazing muesli recipe!
Muesli is a breakfast dish that reminds me somewhat of a trail mix in that it’s a bunch of ingredients thrown together. While the majority is comprised of oats, you can also throw in dried fruit, nuts, seeds, and any other toppings that suit your fancy.
This recipe is so nice because it’s literally just throwing things together. You don’t have to worry about cooking anything, baking anything, you don’t even have to chop anything if you don’t want to! Sunday I’ll throw this all together and store it in a mason jar and then throughout the week I’ll go ahead and measure out a serving for breakfast the next day.
For my actual breakfast recipe, all I do is throw 1/2 cup of the muesli into a small container with 3/4 cup of vanilla soy milk and 1/4 cup blueberries. I let that sit in the fridge overnight and in the morning while I’m packing up my lunch I’ll add a little bit of honey for sweetness. It’s simple, delicious, healthy, and keeps me full until lunch! Can’t get much easier than that.
In a large bowl I mix together:
- 2 cups old-fashioned oats
- 1/2 cup dried cranberries*
- 1/2 cup raw and unsalted almonds**
- 1/2 cup unsweetened coconut
- 1/4 cup chia seeds
- 2 tsp cinnamon
* Feel free to add any dried fruit that you like, you don’t have to stick with cranberries.
** If you would like, you can give the almonds a rough chop before adding them. But like I said, I’m lazy so I just throw them in whole.
